Zest:
2 oranges
2 lemons
2 limes

Zest 2 of each fruit and soak in water
with 1 cup of sugar.
Alternatively, just add sugar to zest
and spread on parchment paper and
let dry.
Some zest will be used for the citrus
layer. Rest goes on top of pie.
Crust:
10-12 double graham crackers,
crushed
1/3 cup sugar
1/2 cup margarine, melted

Filling:
11 oz cream cheese
3 eggs, well beaten
1/2 tsp vanilla
1/2 cup sugar

Beat and pour into crust. Bake at 375°
for 20-25 minutes until set. Set aside
to cool.
Whipped cream topping:
1 cup heavy cream
1/4 cup sugar
1 tsp vanilla
Orange, lemon and lime zest

Whip cream until spreadable. Cover
pie. Sprinkle zest on top of pie.
Create zest birdsnest with long strips
of zest.
Juice from 3 oranges
Juice from 4 large lemons
Juice from 4 limes
1/2 packet gelatin
1/2 cup sugar
Orange, lemon and lime zest
